AIR FRYER PARMESAN ZUCCHINI CHIPS

I found this recipe off of Pinterest one day and decided I wanted to try it out. I am so happy that I did because the zucchini chips came out so tasty! If you don't already have an air-fryer, I HIGHLY recommend getting one! TOMATO PESTO MOZZARELLA CHICKEN

This was a perfect recipe to make for dinner because I had leftover tomatoes and mozzarella that I needed to use before they went bad. It was so easy and simple to make and turned out amazing! I am very picky about eating leftovers, especially chicken, but when I had it for lunch the next day it was still delicious and wasn't dry at all. I didn't have any basil at home and was too lazy to run to the store to get some, but definitely consider using some if you try out this recipe. There's just something about the tomato, mozzarella, and basil combo that I am just obsessed with. TOMATO SALAD

Not a fan of lettuce and wanting a delicious salad? Then this is the perfect recipe for you! My mom made this tomato salad for my family growing up and it is one of my favorite recipes! It is so simple and easy to make, plus tasty. It takes less than 10 minutes, so it perfect to make when you are in a hurry. I either make it for lunch or eat it as a side salad with my dinner.  INGREDIENTS: - grape tomatoes - white onion - fresh mozzarella cheese - cucumber - olive oil - salt & pepper Start off by slicing the grape tomatoes in half (I used about a cup of tomatoes), and then dice a 1/4 of a white onion. Cut 1/4 of a cucumber and some fresh mozzarella into small pieces. Add the tomatoes, onions, cucumber, and mozzarella into a bowl. Drizzle a little bit of olive oil, salt, and pepper. OVERNIGHT OATS

I am not going to lie to you guys ... I have never been a crazy fan of oats or oatmeal, something about the texture just really throws me off. HOWEVER, I was at the juice bar while I was home over the weekend and decided to grab their overnight oats and absolutely loved it! I seriously ate the entire thing it was so delicious. When I came back to school, I decided I wanted to try it out and make some myself and share it with all of you!  My inspiration for this recipe came from Pinterest.  Coming at you guys with another easy and simple recipe with only 3 main ingredients! I am all about fast and simple recipes, especially lately when I have been crazy busy with school and work. One of the great things about cooking dinner in the oven is that you don't have to watch it as closely and you can work on other stuff while it is cooking.  Here is the recipe that I got inspiration from: https://www.eatwell101.com/salsa-fresca-chicken-bake-recipe#recipecardo. The recipe calls for making your own fresh salsa by hand, but I find it easier to just buy a package of pico de gallo at the store. This will save you money and time.
