TOMATO SALAD

Not a fan of lettuce and wanting a delicious salad? Then this is the perfect recipe for you! My mom made this tomato salad for my family growing up and it is one of my favorite recipes! It is so simple and easy to make, plus tasty. It takes less than 10 minutes, so it perfect to make when you are in a hurry. I either make it for lunch or eat it as a side salad with my dinner. 


INGREDIENTS:

- grape tomatoes

- white onion

- fresh mozzarella cheese

- cucumber

- olive oil

- salt & pepper


Start off by slicing the grape tomatoes in half (I used about a cup of tomatoes), and then dice a 1/4 of a white onion. Cut 1/4 of a cucumber and some fresh mozzarella into small pieces. Add the tomatoes, onions, cucumber, and mozzarella into a bowl. Drizzle a little bit of olive oil, salt, and pepper. Stir the salad til the olive oil and seasonings are evenly coated and then it is ready to eat! 

Usually when I make this salad, I buy fresh mozzarella balls because they are the perfect size and saves me a little bit of time cutting the cheese. Also, when my friend makes this recipe she adds avocado to it; however, I don't because I am not a fan of avocado in my salads but this would be a great addition if you like avocados.

    1. As a college student, I live for simple and fast recipes! If you like avocados, you should try adding them in it. My friend said its super good with it! Let me know how it turns out!
