AIR FRYER PARMESAN ZUCCHINI CHIPS

I found this recipe off of Pinterest one day and decided I wanted to try it out. I am so happy that I did because the zucchini chips came out so tasty! If you don't already have an air-fryer, I HIGHLY recommend getting one! I use my air fryer all the time and it's a healthier option than frying your food with oil.

INGREDIENTS:

- 1 cup of almond flour

- 1/2 of a zucchini 

- 1 cup of bread crumbs

- 1/2 cup of parmesan cheese

- 1 egg

- Spices:

    - salt, pepper, paprika, onion powder, garlic powder


Preheat the air fryer to 350 degrees F. Mix the almond flour and spices in a small bowl. In another small bowl, mix together the bread crumbs and parmesan cheese. Beat the egg in a separate small bowl and slice the zucchini in thin pieces. Dip each slice of zucchini in the egg mixture and then the almond flour. Dip the slice of zucchini in the egg mixture again and then press the zucchini down in the bread crumbs/parmesan mixture so that the zucchini is fully covered. Repeat this process for each slice of zucchini. Once you have finished each slice of zucchini, place the slices in the air fryer. Let the zucchini cook for around 6-7 minutes or until the top is crispy, and then flip each of the slices over and cook for another 5-6 minutes. Take the zucchini slices out of the air fryer and let it sit for 5 minutes and then enjoy!

  1. Those look really good! I feel like zucchini is such an interesting food to cook with. I've even made zucchini brownies and they tasted exactly like normal ones!
