BANANA OAT PANCAKES

Image
If you're looking to use up your bananas that are going bad soon, you should check out this healthy banana pancake recipe that is so easy to make with only a few main ingredients! I found this simple recipe on Pinterest over a year ago and have been using it ever since.  INGREDIENTS: - 1 cup of quick oats - 2 ripe bananas  - 2 eggs - optional:      - honey     - cinnamon      -  chocolate chips When I said this recipe is easy to make, I seriously mean it is SO easy as you just throw everything in the blender. I personally don't like the texture of quick oats, so I put the oats in the blender first til it has a consistency similar to flour. I found that the quick oats blend better without the other ingredients.  Once the oats are at the consistency I want, I then add the eggs and bananas. The more ripe the bananas, the better! This is also why this recipe is perfect to use when your bananas are brown and going to become bad soon...

HONEY GARLIC SHRIMP

If you're looking for an easy, delicious recipe you will want to check this one out! As a college student, there are definitely nights where I need a fast meal to whip up real quick. One of the things I love about this recipe is that it only took me 20 minutes to prepare and cook the entire thing.  You can serve the shrimp on rice or with some of your favorite vegetables. I served mine over organic quinoa and brown rice. I get these quinoa/brown rice packets that are only $2.50 and take 90 seconds in the microwave to cook. They are so flavorful and beyond easy to prepare. Here is the link if you want to check them out: https://www.target.com/p/seeds-of-change-organic-quinoa-brown-rice-8-5oz/-/A-13474481#lnk=sametab INGREDIENTS: - 1/2 lb of shrimp - 1/3 cup honey - 1/4 cup low sodium soy sauce - 1 tbs minced garlic  STEPS: First, whisk together the honey, soy sauce, and garlic in a bowl. Once the marinade is the same consistency, pour half of it into a plastic baggie and t...

TURKEY CHILI

Image
I don't know about you but whenever it is snowing or super cold outside I crave a nice bowl of chili. It's been snowing in my area for the past few days and I needed an easy dinner to make, so this recipe was perfect.  Here is the link to the recipe I (somewhat) followed:  https://www.allrecipes.com/recipe/80969/simple-turkey-chili/ I like to use ground turkey instead of beef because it's lower in saturated fats and usually in calories. However, you can easily replace the ground turkey for beef if desired. Whenever I use ground turkey I tend to add more of the spices because it is a little more bland than using beef.  One great way to save money if you don't have a lot of the spices is to buy the taco seasoning packets. I noticed awhile ago that the packets have a lot of the spices that are used in chili recipes. Depending on where you buy them, they range anywhere from like 50 cents to a little over a dollar. If you plan to use the seasoning packets, I suggest using tw...

COCONUT CHICKEN TENDERS

Image
I think it's safe to say that chicken tenders are everyone's favorite!  Before I came back to school, I raided my pantry and one of the random things I grabbed was coconut flakes. I suck at coming up with dinner ideas on my own, so Pinterest is my best friend for that. As I was browsing, I found this coconut chicken tenders recipe and lemme just say, thank god I did. I love this recipe because its fun, easy to make, and SO delicious.  Here is the link if you want to try it out or follow the recipe! https://www.playpartyplan.com/baked-coconut-chicken-tenders/#recipe.  You will soon come to find out that I usually just use the recipes as a general guide rather than using the exact measurements and ingredients. I think this is what makes cooking so creative and exciting because there are so many variations to every recipe and you can customize it to your own liking.  INGREDIENTS I USED: - chicken tenders - coconut flakes  - eggs - spray coconut oil - panko bread cr...
