HONEY GARLIC SHRIMP
If you're looking for an easy, delicious recipe you will want to check this one out! As a college student, there are definitely nights where I need a fast meal to whip up real quick. One of the things I love about this recipe is that it only took me 20 minutes to prepare and cook the entire thing.
You can serve the shrimp on rice or with some of your favorite vegetables. I served mine over organic quinoa and brown rice. I get these quinoa/brown rice packets that are only $2.50 and take 90 seconds in the microwave to cook. They are so flavorful and beyond easy to prepare. INGREDIENTS:
- 1/2 lb of shrimp
- 1/3 cup honey
- 1/4 cup low sodium soy sauce
- 1 tbs minced garlic
STEPS:
First, whisk together the honey, soy sauce, and garlic in a bowl. Once the marinade is the same consistency, pour half of it into a plastic baggie and then add the shrimp. Shake it all up and let it sit in the fridge to marinate for 10 minutes. If you aren't on a time constraint you can let the shrimp marinade longer if wanted.
Heat a little olive oil on a skillet over medium to high heat. Place the shrimp into the pan and let it cook for about 3 minutes on each side, or until the shrimp is pink. Add the remaining marinade right before serving the shrimp.

Yum! I'm going to have to try this - I love that it's so simple, yet sounds so tasty! I'm don't enjoy raw or plain shrimp, but I love it as part of a hot dish!
ReplyDeleteAlso, for anyone who has a Costco membership, they sell the rice/quinoa packets there as well. They are super easy but make a great base for lots of different dishes.
I agree, I love using rice/quinoa in my meals because it pairs so well with a variety of foods! I have even seen it used in salad recipes, which I don't think a lot of people would think of. I've also never got any packets at Costco, but I'll have to go and try them out!
