BANANA OAT PANCAKES

If you're looking to use up your bananas that are going bad soon, you should check out this healthy banana pancake recipe that is so easy to make with only a few main ingredients! I found this simple recipe on Pinterest over a year ago and have been using it ever since. 


INGREDIENTS:

- 1 cup of quick oats

- 2 ripe bananas 

- 2 eggs

- optional: 

    - honey

    - cinnamon 

    - chocolate chips


When I said this recipe is easy to make, I seriously mean it is SO easy as you just throw everything in the blender. I personally don't like the texture of quick oats, so I put the oats in the blender first til it has a consistency similar to flour. I found that the quick oats blend better without the other ingredients. 

Once the oats are at the consistency I want, I then add the eggs and bananas. The more ripe the bananas, the better! This is also why this recipe is perfect to use when your bananas are brown and going to become bad soon. I added a drizzle of honey and a little cinnamon to add some sweetness and extra flavor. 

You will want to heat a pan on medium-high heat. Spray the pan with avocado oil (can be any spray oil you have or even a little butter). Pour the batter on the pan. After placing the mix in the pan and before flipping the pancake, you can sprinkle any ingredient you would like to add. On a couple of the pancakes, I added some chocolate chips. Blueberries or coconut flakes are also great options to add as well. The pancakes are more delicate than regular pancakes, so make sure to let them cook through on one side before flipping. Once the pancakes are done, you can also add any toppings. I just poured some pure maple syrup on top, but I have added pecans or fresh bananas in the past. 

The pancakes are definitely more dense than regular pancakes, but they are so delicious and moist! Definitely recommend this recipe if you need a simple, and easy breakfast meal.
