RASPBERRY OATMEAL COOKIES

If you have a sweat tooth like me and looking for a recipe that is tasty and healthy, then this is the perfect recipe for you to make! These cookies are seriously so soft and chewy, plus are less than 100 calories for each cookie. I've made these cookies twice now in the past two weeks because of how good they taste. I highly recommend trying them out!

INGREDIENTS:

- 1 cup of oats

- 3/4 cup of almond flour

- 1 1/2 tsp of baking powder

- 1/2 tsp of cinnamon

- 1/8 tsp of salt

- 2 tbsp of melted coconut oil

- 1 large egg (must be room temperature)

- 1 tsp of vanilla extract

- 1/2 cup of honey

- 1/2 cup of chopped raspberries


Preheat the oven to 325 degrees F. In a medium sized bowl, mix together the oats, almond flour, baking powder, cinnamon, and salt. In another medium bowl, whisk together the melted coconut oil, egg, and vanilla. You want to make sure the egg is at room temperature, otherwise the cold egg will cause the coconut oil to coagulate (turn back to a solid). Stir in the honey into the bowl with the wet ingredients until it is well incorporated into the mixture. Add the dry mixture into the other bowl and stir until it is all mixed well together. Fold in the raspberries and then let the dough chill in the fridge for at least 30 mins. 

Place parchment paper or aluminum foil on a baking sheet. Add scoops of the dough onto the baking sheet (make sure they are the same size so the cookies bake evenly). Bake the cookies for 13-15 minutes and then let them cool for about 15 minutes.
